Zesty Meatless Kotosoupa: Marrow Avgolemono for Keto

Ingredients:
- Beef Marrow Bones
- 2 carrots
- 2 parsley root
- 1 celery
- 1 onion
- 1 fennel
- 1 lemon
- 4 cloves of garlic
- 2 liters of water
- 6 eggs (or egg yolks)
- 3 tablespoons of lemon juice
- 3 dl of cooking cream (or sour cream)
- 2 tablespoons of rice
- 1 teaspoon of salt
- 1/2 teaspoon of pepper
- 1/2 teaspoon of nutmeg
- 1 teaspoon of fenugreek
- 1 bunch of celery leaves
- 4 bay leaves
- a few leaves of fresh thyme
- dill (for garnishing)
Instructions:
1. Preparing the ingredients for the Zesty Meatless Kotosoupa:
Clean the beef marrow bones, removing any excess fat. Salt the marrow area of the bones to ensure it remains contained during boiling.
Wash and peel the vegetables, cutting larger ones into halves or quarters. Arrange them over the salted bones in a deep soup pot or crock pot. If using a pressure cooker or multi-cooker, it’s ideal for flavor preservation.
2. Preparing the Broth for Zesty Meatless Kotosoupa:
Add 2 liters of water, 1 lemon, 4 cloves of garlic, 4 bay leaves, a bunch of celery leaves or celery stalks, some fresh thyme, salt, pepper, fennel seeds and fenugreek.
Let them boil over low heat for 1 hour and 45 minutes. Once the broth has boiled, strain it from the bones and vegetables.
3. Preparing the Zesty Meatless Kotosoupa:
Dice the cooked and strained carrots, parsley, and celery into small cubes.
In a deep bowl, whip the eggs until foamy. Combine with the cooking cream or sour cream and 3 tablespoons of lemon juice. For a smoother consistency, use only the egg yolks, blending them with your chosen cream and 3 tablespoons of freshly squeezed lemon juice.
3. Cooking the kotosoupa:
Gradually incorporate the strained hot broth into the egg-cream mixture, stirring constantly to prevent curdling. Add the diced cooked vegetables, spices, and 2 tablespoons of rice. Bring to a gentle boil over low heat and simmer for up to 8 minutes until the rice expands and softens.
3. Serving Zesty Meatless Kotosoupa: Marrow Avgolemono for Keto
Remove the soup from the stove and allow it to cool slightly. While it cools, chop some fresh dill for garnish.
If the soup has curdled due to heat, add a tablespoon of cold sour cream to the serving bowl or plate. Gradually ladle the soup into the bowl while stirring until the curdles disappear.
Garnish with chopped dill and serve with bread.
