Lettuce Soup: A Transylvanian Classic with a Twist

Ingredients:
- 3-4 heads of lettuce
- 200 g smoked Transylvanian bacon (or 2 spoons of olive oil)
- 4 eggs
- 4 baby garlics
- 1 litre of water
- 500 ml of milk
- 200 ml sour cream
- 100 ml dry white wine
- 2 tablespoons of flour
- 1 pinch of baking soda
- Salt and pepper to taste
- 1 bunch of fresh dill
Instructions:
1. Preparing the ingredients for Lettuce Soup:
Dice the smoked bacon, or use olive oil instead, and finely chop the baby garlics.
Wash the lettuce heads and cut them into smaller pieces.
In a bowl, mix 1 tablespoon of flour with 200 ml of sour cream until well combined. Set aside.
2. Cooking the Lettuce Soup:
Heat a deep pot over medium heat and add the diced bacon (or olive oil). Once it starts to release grease, add the chopped baby garlic and sauté for 3 minutes.
While the bacon and garlic are cooking, bring 1 litre of water to a boil in a separate pot.
Add the cut lettuce to the pot with the bacon and garlic. Stir until the lettuce reduces in volume and changes color.
Pour the hot water into the pot with the bacon and lettuce. Season with salt and pepper, cover with a lid, and let it simmer for 7 minutes over low heat.
3. Preparing the omelette:
In a bowl, beat 4 eggs and mix them with 1 tablespoon of flour and a pinch of baking soda.
Heat a greased frying pan over medium heat and pour the egg mixture into it. Cover with a lid and let the omelette cook for 3 minutes until fluffy.
Then, flip it and cook for another 3 minutes until golden brown and set. Remove from heat, let it cool, and cut it into small slices or dice.
4. Finishing the soup:
After 7 minutes of simmering, pour the sour cream mixture into the pot with the lettuce and bacon. Stir in 500 ml of milk, cover with the lid, and bring it to a boil.
Reduce the heat and let the soup simmer for 2 more minutes.
Finally, add 100 ml of dry white wine or lemon juice to the soup and stir in the sliced omelette. Simmer for another minute.

Garnish the soup with fresh dill before serving.
