Ingredients:

  • 4 big fennel
  • 1 small celery
  • 1 onion
  • 4 cloves of garlic (baked!)
  • 2 tablespoons of olive oil
  • 1 1/2 l of water
  • 2 anise star (optional)
  • 1 cup of white dry wine
  • 1 teaspoon of thyme
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of nutmeg
  • 2 dl of cooking cream
  • Honey, fennel leaves and nuts for garnishing

First steps:

Clean and chop 4 big fennels, a celery and also, 1 onion.

Place them into a pot with a lid along with 1.5 liters of water, 1/2 teaspoon of salt, 1/2 teaspoon of nutmeg, 1 teaspoon of thyme, and 2 star anise (optional). Boil over medium heat until softened, approximately for 25 minutes.

Meanwhile, bake 4 cloves of garlic wrapped in aluminium foil in the oven.

Next steps for Silken Fennel Cream Elixir:

Let the boiled vegetables cool for a bit, then add the baked garlic to them. Mash or blend the mixture until creamy, then stir in 1 dl of white dry wine, 2 tablespoons of olive oil, and finally pour the cooking cream.

Put the mixture on the heat, stir, and boil over low heat for 2 minutes.

Last step for Silken Fennel Cream Elixir:

Pour the cream soup into a bowl and garnish with walnuts or pine nuts and fennel leaves. Serve it with honey and toasted bread.
