Snap, Stir, Serve: Shiitake Stew’s Reserve

5 minutes preparation time, 15 minutes cooking time
Ingredients:
- 2 tablespoons of olive oil
- 400g Shiitake mushrooms
- 200g Button mushrooms (Champignon)
- 6 scallions
- 1 baby garlic (if season, if not, use 2 cloves of garlic)
- 1/2 red bell pepper
- 50g butter
- 1/2 teaspoon of pepper
- 1/2 teaspoon salt (or less)
- 2 dl of cooking cream (sour cream)
- parsley leaves
Instructions:
1. Preparation for Shiitake Stew’s Reserve:
Clean and chop the scallions, garlic, and parsley leaves into small pieces. Cut the mushrooms into quarters or sixths, depending on their size.
2. Cooking Shiitake Stew’s Reserve:
Heat a greased frying pan with 2 tablespoons of olive oil. Add the chopped scallions and garlic, and sauté until they reduce to half their size.
Add the button mushrooms and sauté for about 3 minutes, stirring occasionally then add the shiitake mushrooms and continue stirring until any released water evaporates, and they are browned.
Add the chopped pepper and spices. Stir in the butter, then reduce the heat. Allow them to steam for an additional 5 minutes.
Pour in 2 dl of cooking cream or liquid sour cream, stirring until the mixture comes to a boil. Sprinkle the chopped parsley leaves over the dish, then remove the pan from the stove.
3. Serving Shiitake Stew’s Reserve:
