Ingredients:
- 250g red lentils
- 1 big potato (or two small)
- 1 red bell pepper
- 1 fennel (without the stem)
- 1 red onion
- 2 carrots
- 1 small celery
- 4 cloves of garlic (baked!)
- 2 tablespoons of olive oil
- 1 1/2 l of water
- 1 dl of cooking cream or home-preserved tomato juice
- 1 teaspoon of savory (thyme)
- 1/2 teaspoon of turmeric
- 1/3 teaspoon of ginger powder
- 1/3 teaspoon of cumin
- 1/3 teaspoon of coriander (optional)
- 1/3 teaspoon of salt (or even less)
- 1/3 teaspoon of black pepper
- 3-4 bay leafs
Instructions:
First step: Stir & brown the red onion in 2 tablespoons of olive oil, then add the chopped onion, the fennel and the red bell pepper and let it brown up to 5 minutes. Meanwhile, clean 4 cloves of garlic, wrap them in an aluminum foil and let them bake up to 15 minutes in the oven (180C).
Next step: Add in the same pot all the remained chopped vegetables (carrots, parsley roots, potato, celery), the red lentils, the water and all the spices. Boil for 20 minutes. If you use a high pressure pot or a cooker, it’s even better to preserve all flavours.
Third step: Wait up to 10 minutes, until the soup cools. Take out the bay leafs, then mash the baked garlic, put it into the pot with the boiled vegetables and blend it all, until it’s creamy. Add 1 dl of cooking cream or home-preserved tomato juice (based on your preferences: sweet or sour) and blend/mix it for a few more seconds. Stir and cook the mixture slowly for 2 minutes.
Last step: Pour the cream soup into a bowl, then use almonds or pine buds and chopped parsley leaves for decorating. Then serve your cream soup with toasted bread.
