  • 2 big slices of pineapple
  • 2 tablespoons of olive oil
  • 1 teaspoon of salt
  • 1 teaspoon of pepper
  • 1 teaspoon of sumac
  • 1 teaspoon of black cumin

Ingredients for the Blueberry Stew:

  • 200 g of blueberry
  • 1 mandarin’s juice
  • 1 tablespoon of tomato sauce
  • 1 tablespoon of pesto
  • 1 tablespoon of honey
  • 1 teaspoon of nutmeg
  • 1 teaspoon of sumac (or 1 tablespoon of wine)
  • 1 teaspoon of black cumin

First steps:

Preheat your oven to 180°C and choose a baking tray with a lid.
Next, wash the pork chops and dry them thoroughly to ensure even seasoning with salt, pepper, sumac, and black cumin. Set aside.

Then, prepare 2 red onions, half a pineapple, and 200 g of fatty bacon by cleaning and slicing them into large pieces.

Next steps:

Grease the baking tray with 2 tablespoons of olive oil, then arrange the onions and bacon slices on the bottom of the tray.

Place the pork chops on top, followed by a few slices of pineapple.

Cover the baking tray with the lid and transfer it to the preheated oven. Bake the steaks for 50 minutes.

The addition of pineapple to this dish not only enhances its flavor but also brings a host of health benefits to the table. Rich in vitamins, minerals, and antioxidants, pineapple is known for its digestive aid properties and can help improve digestion. It contains bromelain, an enzyme that breaks down proteins, aiding in digestion and reducing bloating. Moreover, pineapple is a good source of vitamin C, which supports immune function and overall health. To learn more about the health benefits of pineapple, you can visit WebMD’s slideshow.

Third steps:

While the steak is baking in the oven, halve a mandarin and extract its juice into a small saucepan.

Add 1 tablespoon of honey and 200g of cleaned blueberries to the pan.
Place the saucepan over medium heat and stir until it reaches a boil.

Once boiling, add 1 tablespoon of tomato sauce (or tomato juice as an alternative), 1 tablespoon of pesto, 1 teaspoon of nutmeg, 1 teaspoon of black cumin, and a pinch of salt. For a tangy flavour, sour it with 1 teaspoon of sumac or one tablespoon of dry wine. Stir thoroughly and allow the mixture to simmer for 15 minutes.
Let it cool, it will thicken a little.

Last step:

Serve the pork chop steak with the blueberry sauce generously spooned over mashed potatoes.
