Ingredients for Nutty Celery Cream Soup:
- 2 celery
- 1 potato
- 1 fennel (without the stalks)
- 4 cloves of garlic (baked!)
- 2 tablespoons of olive oil
- 1 1/2 l of water
- 2 dl of cooking cream or milk
- 1 tablespoon of peanut butter or ginger infused honey
- 1 squeezed mandarin juice
- 1 teaspoon of ginger
- 1 teaspoon of marjoram
- 1/2 teaspoon of salt
- 1/2 teaspoon of nutmeg
- 1 pinch of saffron
- 2 tablespoon of roasted walnuts
- 2 tablespoons of smoked cheese
- 2 fennel leaves
First steps:
Clean and cut 2 celery stalks, 1 fennel bulb, and 1 potato into larger pieces. Place them into a pot with a lid along with 1.5 liters of water, 1/2 teaspoon of salt, 1/2 teaspoon of nutmeg, 1 teaspoon of marjoram, 1 pinch of saffron, and 1 teaspoon of ginger. Boil them until they soften, approximately for 20-30 minutes.
Meanwhile, bake 4 cloves of garlic wrapped in aluminium foil in the oven. Bake 2 tablespoons of walnuts, also.
Next steps:
Let the boiled vegetables cool for a bit, then add the baked garlic to them. Mash or blend the mixture until creamy.
Pour in the juice of a squeezed mandarin, add 1 tablespoons of peanut butter (or ginger infused honey) and 2 tablespoons of olive oil, and then 200 ml of cooking cream (or milk). Put the mixture on the heat, stir, and boil over low heat for 2 minutes.
Last step for Nutty Celery Cream Soup:
Pour the Nutty Celery Cream Soup into a bowl and garnish with grated smoked cheese, roasted walnuts and chopped fennel leaves.
Serve your Nutty Celery Cream Soup with toasted bread on the side (optional).
