Hungarian Goulash Redux: Klara’s Twist

5 minutes preparation time, 45 minutes cooking time
Ingredients:
- 1 kg pork loins (Extend cooking time by 1 hour if using wild boar meat, 30 minutes if using veal)
- 2 kg of potatoes
- 2 fennels (or 1 if it’s big)
- 2 red onions
- 1 red bell pepper
- 1 small celery
- 1 bunch of spring onions
- 3 baby garlic
- 3 tablespoons of lard
- 2 dl of tomato juice
- 5 dl of water
- 1 dl of wine
- 1 tablespoon of paprika
- 1 teaspoon of black cumin
- 1 teaspoon of sumac
- 1/2 teaspoon of salt
- 1/2 teaspoon of urfa biber (or chili)
- 3 bay leaves
- 1 star anise
- basil leaves (optional)
Instructions:
1. Preparing:
Clean and dice the pork meat and the potatoes. Chop the cleaned vegetables. Keep the diced potatoes submerged in cold water to prevent oxidation.
2. Browning:
Heat 3 tablespoons of lard in a deep pot over medium heat, or ideally, use a pressure-cooker pot to preserve the flavors. Add the meat and cook, stirring occasionally, until the water released by the meat evaporates, about 10 minutes.
When the liquid in the pot has evaporated from the browning meat, add the chopped fennel, celery, and onions (both red and spring). Stir and brown until their volume is reduced by almost half, then add the garlic and pepper. Continue stirring to allow them to soften, approximately 4 minutes. The onions and fennel should appear translucent by now.
3. Cooking Hungarian Goulash Redux:
Add all the spices followed by the bay leaves, stirring for a few seconds, then pour in 2 dl of tomato juice. Add the diced potatoes, followed by 5 dl of water into the pot. Cover it with a lid and allow them to cook until tender, approximately 20 minutes. For a creamier texture, extend the cooking time to 30 minutes.
When nearly done, uncover and stir in 1 dl of wine for a refined flavor, then let it simmer over low heat for a few more minutes.
5. Serving Hungarian Goulash Redux:
Garnish it with basil leaves (optional) and serve it with bread.
