Ingredients:
- 1 fresh, unsmoked pork knuckle
- 2 tablespoons of lard
- 2 tablespoons of olive oil
- 4 red onions (or mix)
- 2 heads of garlic
- 2 tablespoons of mustard
- 2 tablespoons of paprika sauce
- 1 fennel
- 2 carrots
- 1 parsley root
- 1 small bunch of fresh spring thyme
- 1 teaspoon of paprika
- 1 teaspoon of salt
- 1 teaspoon of sumac
- 1/2 teaspoon of urfa biber
- 1/2 teaspoon of pepper
- 1/2 teaspoon of nutmeg
- 1 dl of tomato juice
- 2 dl of beer
- 1 dl of water
- bay leaves
- fresh basil
Instructions:
Begin by thoroughly washing the pork knuckle, then pat it dry. Generously rub the meat with salt, pepper, sumac, urfa biber, nutmeg, and paprika.
Clean and peel the vegetables, then cut them into larger pieces.
Grease a deep cooking tray with lard and olive oil. In case you’re wondering why lard, here is the answer! Add mustard, paprika sauce, onions, and garlic heads.
Place thyme springs, sliced carrots, and parsley root over them.
Position the marinated knuckle on top, then sprinkle it with tomato juice. Cover the meat with fennel bulb layers or slices and add bay leaves. Pour in water and beer, cover the tray, and transfer it to the preheated oven (180°C).
Let it roast for 2 and a half hours. Then, turn the knuckle over and place it back uncovered in the oven for another 30 minutes, or until golden brown.
Serve the Hearty Herb-Roasted German Pork Knuckle when it’s ready or alongside a perfect complementary side dish to your main course.
