Grandma’s Kohlrabi Soup Reimagined

Ingredients for the Kohlrabi Soup :

  • 4 kohlrabis
  • 1 carrot
  • 1 parsley root
  • 1 onion
  • 1 fennel
  • 1 red bell pepper
  • 2 dl of tomato juice
  • 2 liters of water
  • 2 cloves of garlic
  • 4 tablespoons of olive oil
  • 2 tablespoons of flour
  • 1 teaspoon of paprika
  • 1 teaspoon of salt
  • 1/2 teaspoon of pepper
  • 1 bunch of celery leaves
  • or parsley leaves

First steps:

Clean and chop 1 onion, 1 fennel, 1/2 celery stalk (apio) and 1 bunch of celery leaves or parsley leaves. Cut a red bell pepper in half and remove the seeds. Then finely dice the other cleaned vegetables: 4 kohlrabis, 1 carrot, and 1 parsley root.

Next steps:

Grease your soup pot with 4 tablespoons of olive oil. Add the diced kohlrabis, the fennel and the celery stalks, sauté them until they begin to soften over medium heat.

Add the onion, and continue to cook until translucent.

Stir in 2 tablespoons of flour and cook until golden. Then add 1 teaspoon of paprika, stir, and quickly pour in 2 liters of cold water while stirring to prevent lumps.

Add the diced carrot, parsley root, 2 cloves of garlic, 1 teaspoon of salt, 1/2 teaspoon of pepper, 200ml of tomato juice, the half red bell peppers, chopped celery or parsley leaves. I prefer celery; it adds a completely different flavor.

Last steps:

Bring the Kohlrabi Soup to a boil, then lower the heat and simmer for 30 minutes.

Serve the Kohlrabi Soup with or without sour cream, based on your preferences.
