Fennel Fantasy: Nourishing Creamy Stew for Digestive Health

Ingredients:
- 2-3 fennels (foeniculum vulgare)
- 2-3 spring onions
- 2-3 baby garlic
- 2 tablespoon of olive oil
- 50 g melted butter
- 1 dl of water
- 1 dl of wine
- 2-3 dl of cooking cream
- 1/2 teaspoon of salt and pepper
- 1/2 teaspoon of nutmeg
- 1 bunch of coriander leaves
- 4 bay leaves
- basil (for garnishing)
Instructions:

Clean the fennel bulbs, stalks, the spring onions and the baby garlics thoroughly, then chop them separately using a chopper.
2. Cooking the Fennel Fantasy: Nourishing Creamy Stew for Digestive Health
Heat two tablespoons of olive oil in a deep frying pan or wok over high heat. Add the chopped fennel and sauté until it reduces in volume by half. Incorporate 50g of butter and continue stirring until melted.
Reduce the heat, add 1 dl of water, and let the fennel simmer for up to 10 minutes, stirring occasionally.
Once most of the liquid has evaporated, add the bay leaves, coriander leaves, chopped baby garlic, and spring onions. Sauté until softened. If needed, add water to prolong the simmering process.
Once the onions are soft, add the spices and pour in 1 dl of white wine. Cover the pan with a lid, and simmer the stew for 5 more minutes, stirring occasionally.

When the stew reaches a creamy consistency, add the cooking cream.
Bring to a boil, then reduce to a simmer and cook for 2 minutes while stirring.
For a stronger flavor, consider incorporating fennel seeds or ground fennel seeds. Fennel seeds are known for their benefits for females, but they also offer numerous health benefits for all.
