Fast Eggplant Casserole

5 minutes preparation time, 20 minutes cooking time
Ingredients:
- 1 eggplant
- 200g mozzarella cheese
- 100g Emmental cheese
- 3 tablespoons of cooking cream
- 2 tomatoes (or more if they are small)
- 1 teaspoon of oregano
- 1 tablespoon of olive oil
- Salt and pepper to taste
First step for Fast Eggplant Casserole:
Slice the eggplant, mozzarella, and tomatoes. Grate the Emmental cheese.
Next step for Fast Eggplant Casserole:
Grease a baking tray with olive oil and arrange the eggplant slices on the bottom.
Place the mozzarella slices on top of the eggplant slices. Sprinkle with oregano and add the grated Emmental cheese.
Drizzle the cooking cream evenly over the cheese layer, then garnish with tomato slices.
Third step Fast Eggplant Casserole:
Preheat the oven to 180°C (350°F) and bake the dish for 20 minutes or until the cheese is melted and bubbly.

Once cooked, serve immediately with fresh vegetables or horderves.
