Caramelized Roast Lamb, Easter Elegance with Veggie Harmony

Ingredients for preparing the lamb meat and the marinade:

  • Lamb meat (1 leg of lamb or racks)
  • 2 dl of sweet white wine
  • 1 dl of water or tomato juice
  • 5 tablespoon of olive oil
  • 3 tablespoons of mustard
  • 2 red onions
  • 8 cloves of garlic
  • 1 teaspoon of salt
  • 1 teaspoon of sumac
  • 1 teaspoon of pepper
  • 1 teaspoon of cumin
  • 2 teaspoon of dried savory
  • 3 teaspoons of grated ginger
  • 2 springs of rosemary

Ingredients for the Vegetable Stew:

  • 2 tablespoons of sunflower oil
  • 1 leek
  • 1 red onion
  • 1 fennel
  • 4 scallions
  • 1 red bell pepper (California Wonder)
  • 1 orange California Wonder
  • 1 green California Wonder
  • 1 carrot
  • 1 parsley root
  • 4 cloves of garlic
  • 1 dl of water or tomato juice
  • 1 dl wine
  • 1 tablespoon of mustard
  • 1 tablespoon of flour
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of pepper
  • 1/2 teaspoon of cumin
  • 1/2 teaspoon of dried savory
  • 3 bay leaves

Instructions:

1. Marinating the lamb meat:
Begin by washing the lamb meat thoroughly, removing any excess fat, and patting it dry. Rub the meat with salt and crushed garlic. Cut the red onions in half and grate the ginger.
In a deep pot or bowl, place the meat, onions, and ginger. Add olive oil, mustard, sweet wine, water/tomato juice, crushed garlic, and spices. Massage the meat thoroughly, cover, and refrigerate for at least 12 hours.

2. Roasting the Lamb:
Preheat the oven to 170°C. Transfer the marinated lamb and its contents to a deep cooking tray with a lid. Roast for approximately 1 hour. Remove from the oven, drain excess liquid, and sprinkle with olive oil and wine. Return to the oven, baking uncovered for an additional 20 minutes until browned and crispy.

3. Cooking the Stew:
Chop and prepare all the vegetables listed. Sauté in sunflower or olive oil until softened.
