Ingredients for Baby Pancake Rolls:

  • 1 egg
  • 1 cup of all-purpose flour
  • 1 cup of milk
  • 50 g of melted butter
  • 2 tablespoons of ginger infused honey (or any honey)
  • 1 teaspoon of vanilla essence
  • 1 teaspoon of baking soda
  • 250 g of mascarpone
  • 3 bananas

First step:

Melt the butter over very low heat in a small saucepan. Once melted, remove it from the heat and stir in 2 tablespoons of ginger-infused honey until fully combined.

If you don’t have ginger-infused honey, you can use any honey instead and add 1 teaspoon of ginger powder to the mixture. Allow the mixture to cool.

Next steps:

Beat the egg in a large bowl until foamy, then add the melted butter-honey mixture and 2 teaspoons of vanilla essence. Stir thoroughly until well combined.

Add 1 cup of flour to the mixture, then sprinkle 1 teaspoon of baking soda over the flour. Pour in 1 cup of milk. Mix everything well until the batter is smooth and free of lumps. Allow the batter to rest for up to 5 minutes.

Third step:

Let’s bake the Baby Pancake Rolls!
Pour a ladle of batter into a pancake maker and allow it to cook for a few minutes. Alternatively, if you prefer the traditional method like I do, use a frying pan.

Preheat a non-stick frying pan before making the first pancake. Once heated, pour one ladle of batter into the pan. Cook the pancake over medium heat until bubbles start to form on the surface.

Flip the pancake and cook for approximately another 45 seconds, or until golden brown on the other side. Once cooked, transfer it to a plate and let it cool while you make the rest of the pancakes.

Last step:

Spread the ready pancakes one by one with 1 big tablespoon of mascarpone. If serving to older children (3+ years old), you can spread Nutella or any jam you like on the pancakes before adding the mascarpone.

After spreading the mascarpone, place half of a mashed banana on each pancake.

Finally, roll up the stuffed pancakes to get your Baby Pancake Rolls.

When your stuffed pancake rolls are ready, slice them carefully with sharp knife.
