Ingredients:

  • 2 coquelet (poussin chicken or woodcocks)
  • 200 g blueberries
  • 4 small red onions
  • 2 sweet potatoes
  • 2 heads of garlic
  • 1 fennel
  • 1 red bell pepper
  • 1 parsley root
  • 2 heads of garlic
  • 1 squeezed mandarin juice
  • 4 tablespoons of olive oil
  • 1 teaspoon of paprika
  • 1 teaspoon of salt
  • 1 teaspoon of pepper
  • 1 teaspoon of marjoram
  • 1/2 teaspoon of turmeric
  • 1/2 teaspoon of ginger powder
  • 2 dl of water

Instructions:

Preparing the ingredients for Coquelet Supreme:

Start by thoroughly washing each coquelet individually, then pat them dry.

Sprinkle 2 tablespoons of olive oil over them and generously rub with a mixture of salt, pepper, paprika, marjoram, turmeric, ginger, and paprika.

Peel and clean the vegetables, leaving the garlic heads intact. Chop 2 small red onions, half a fennel, half a parsley root, and half a red bell pepper. Slice the remaining vegetables into large pieces. You can also chop some fresh herbs like parsley leaves or basil, fresh marjoram or cilantro.

Wash the blueberries (you can use frozen blueberries if they’re not in season) and then squeeze the juice from the mandarin.

Stuffing the coquelet:

Mix the chopped vegetables with the herbs, sprinkle them with a bit of mandarin juice (reserving the rest for later), and season them with spices of your preference. Add some blueberries to the mixture. Begin stuffing each coquelet with this fruity, herby, spicy mixture.

Once each coquelet is fully stuffed, complete the stuffing by placing a garlic head at the entrance of the cavity. If the cavities are larger than the garlic heads, use some thread or a needle to close or tighten them.

Making the cooking bed:

Grease a deep cooking tray with olive oil. Arrange the sliced vegetables, including the sweet potatoes, in the tray.

Position the two stuffed coquelets on top of the vegetable bed, then drizzle the remaining mandarin juice over them. Finally, scatter all of the blueberries around the coquelets, and pour in 1-2 dl of water based on your cooking tray.

Roasting and browning the Coquelet Supreme:

Place a lid or cover the tray with foil and transfer it to the preheated oven (180°C). Allow the meat on the veggie bed to roast for 1 hour, or until the meat is tender. Extend the roasting time if necessary.

After 1 hour of roasting time, uncover the tray and let the coquelets brown for an additional 30 minutes.
