- 4 eggs
- 125 g of coconut flour (or all-purpose flour)
- 75 g of coconut flakes (or grated coconut)
- 400 ml of coconut cream (or coconut milk)
- 75 g of melted butter
- 2 tablespoons of ginger infused honey (or any honey + 1 teaspoon of ginger)
- 2 teaspoons of vanilla essence
- 1 teaspoon of baking soda
- 1 drop of sunflower oil
Instructions:
Preparing the ingredients for Coconutterly Fluffy Baby Pancakes:
Melt the butter over very low heat in a small saucepan. Once melted, remove it from the heat and stir in 2 tablespoons of ginger-infused honey until fully combined.
If you don’t have ginger-infused honey, you can use any honey instead and add 1 teaspoon of ginger powder to the mixture. Allow the mixture to cool.
Preparing the pancake mix:
Beat 4 eggs in a large bowl until foamy, then add the melted butter-honey mixture and 2 teaspoons of vanilla essence. Stir well.
In another bowl, combine the baking soda with the coconut flour and coconut flakes. If you don’t have coconut flour available, you can substitute it with any other flour such as all-purpose flour, oat flour, almond flour, etc.
Add the flour mixture to the liquid mixture and stir until creamy.
Then pour the coconut cream (or milk) on it and mix it well.
Allow it to rest for up to 5 minutes.
Resting the pancake batter is essential for achieving fluffy and tender pancakes. This resting period allows the ingredients to fully hydrate and mingle, resulting in a smoother batter consistency. For recipes containing ingredients like oatmeal, coconut flakes, and creams, a longer resting time is recommended. Pour a ladle of batter into a pancake maker and allow it to cook for a few minutes. Alternatively, if you prefer the traditional method like I do, use a frying pan.
You can grease and preheat the frying pan with a drop of sunflower oil before making the first pancake, but since the mixture contains melted butter, you can also skip the greasing step.
Pour one ladle of batter into the preheated pan and cook until bubbles form at medium heat.
Flip the pancake and cook for approximately another 45 seconds, or until golden brown.
Don’t be discouraged if your first pancake doesn’t turn out as fluffy or perfectly shaped as you’d hoped. It’s quite common for the initial pancake to be a bit lackluster compared to the rest. Factors such as insufficient heating of the frying pan and pre-greasing can contribute to this. Typically, the pan isn’t sufficiently heated for the first pancake, resulting in a thicker texture. Additionally, pre-greasing the pan can alter the consistency of the pancake batter, making it thicker than desired. However, for this recipe, pre-greasing isn’t necessary since the batter already contains melted butter. So, trust the process and enjoy the improved texture and appearance of your pancakes with each successive batch.
