Ingredients for Egg Muffins:
- 8 drops of olive oil
- 4 eggs
- 1 tablespoon of sour cream
- 4 spring onion
- 1 red bell pepper
- 70g mozzarella or emmental
- 1 pinch of salt
- 1 pinch of baking soda
- 1 bunch of parsley leaves
Instructions:
First step:
Clean and chop the parsley leaves, the spring onions and the red bell pepper, then grate the cheese. Beat the eggs in a bigger bowl.
Next step:
Grease the baking tray with a few drops of olive oil. I prefer to use a silicone muffin tray. In the bowl with the beaten eggs add a tablespoon of sour cream, the chopped peppers, the spring onions, half of the parsley leaves, half of the cheese, the salt and a pinch of baking soda, then mix them well with a spoon.
Third step:
Divide it into equal portions if you use the muffin tray, if not, just pour the mixture into the greased tray. Add the tray into the pre-heated oven (180 C) and bake it for 20 minutes.
Last step:
Open your oven, check the egg muffins’ middle with a needle or a toothpick. Add the remained grated cheese on top of it, then put it back in the oven for another up to 5 minutes baking. Leave it there, until the cheese melts, then remove it from the heat.
