Ingredients:
- 6 or 12 slices of bread
- 200 g ham
- 250g mascarpone
- 100g of fatty sour cream
- 1 red onion or a few spring onions
- 100 g of pre-boiled corn kernels
- 2 eggs
- 100 g of any hard cheese
- 100g mozzarella (optional)
- 1 tablespoon of sunflower oil
- 1 red bell pepper (optional)
- 2 tablespoon of melted butter
- 1/2 teaspoon of salt
- 1/2 teaspoon of pepper
- 1 teaspoon of oregano
- 1 dl of tomato sauce
First steps:
Clean and chop 1 red onion or a few spring onions, also any other herbs you prefer, such as dill, parsley leaves, red bell pepper or garlic. Grate the hard cheese (any kind) and the mozzarella, then finely dice the ham.
Next steps:
In a large bowl, mix the mascarpone with the sour cream.
Then add the grated hard cheese, stir.
Add the other chopped ingredients (ham, onion, bell pepper, herbs and pre-boiled corn kernels). Supplement it with a pinch of salt or 1 tablespoon of mustard, if desired.
Stir well until creamy. If you prefer a thicker consistency, refrigerate for 2 hours.
Third steps:
Melt 2 tablespoons of butter. Grease a baking tray with the melted butter and 1 tablespoon of sunflower oil (or use a greased foil on the bottom).
Use a sliced loaf, if not, slice any bread of your choice. Arrange slices of bread to cover the entire bottom of the tray.
Spread the creamy mixture from the bowl evenly over them.
The creamy cold sandwiches are already tasty as they are, without any baking. However, they become even better when baked.
Sprinkle grated mozzarella on top. If you intend to pack your hot sandwiches later, layer another 6 slices of toast on top and brush them with beaten eggs. Otherwise, place the tray in the preheated oven as it is.
Last steps:
Bake in the preheated oven for 15 minutes at 180°C.
I prefer it with another layer of bread on top. So, I place some slices of bread on top of the sandwiches. Then, I beat 2 eggs in a bowl with a pinch of salt, pepper, and oregano. After that, I brush the bread slices on top with the beaten egg mixture and bake in the preheated oven for 20 minutes at 180°C.
Let it cool for at least 5 minutes to allow the cream inside to thicken, making it easier to cut and separate the sandwiches.
Serve the sandwich with home made tomato sauce or your preferred dipping sauce.
