Ingredients:
- 1 zucchini
- 1 small broccoli
- 1 tablespoon of olive oil
- 1 bunch of spring onions
- 1 small fennel (or a half)
- 4 cloves of garlic
- 2 tablespoon chopped red pepper
- 1 tablespoon of sugar (or honey)
- 50 ml of soy sauce
- 100 ml of mandarin juice
- 1 teaspoon of china mix spices (or 1/2 teaspoon of ginger, 1/2 fennel, 1/3 sweet curry, 1/4 cardamom)
- 1/2 teaspoon of salt (be aware that the soy sauce is already salty)
- 1/2 teaspoon of pepper
- 1 star anise (optional)
- 150 g boiled pasta for side dish
First steps for preparing Broccoli-Zucchini Pasta:
Give the broccoli a proper wash, then trim off the hard base, cut the stalks and place it in a pot. Pour water until covers it, and let it boil over low heat for 15 minutes.
Meanwhile, prepare the zucchini by cleaning, then slicing them into strips. Clean and chop 1 small fennel (or half if it’s larger), along with a bunch of spring onions, half a red bell pepper, and 4 cloves of garlic.
Next steps for cooking Broccoli-Zucchini Pasta:
Boil 150g of pasta for 2 portions. Don’t forget to check on your broccoli. If they are soft, set them aside in a colander until serving.
Meanwhile, grease a frying pan with 1 tablespoon of olive oil. Add the chopped fennel and spring onions, stirring and cooking until translucent, about 5 minutes.
Add the garlic, followed by the bell peppers, and continue stirring until they soften, which should take approximately 3 minutes.
Add the zucchini strips and sprinkle in spices, and optionally, a star anise. Stir and allow it to simmer until the water evaporates.
Then add 1 tablespoon of sugar (or honey). Stir until it melts and browns slightly. Next, pour in 1 dl of mandarin juice (freshly squeezed) and 50 ml of soy sauce. Stir briefly and let it simmer until golden brownish.
Last step for Broccoli-Zucchini Pasta:
Rinse and drain your boiled pasta, then serve it with the zesty zucchini stew garnished with the broccoli.
