Ingredients:
- 3 bananas
- 3 eggs
- 1/2 melted butter
- 3 spoon of ginger flavoured honey
- 1 teaspoon of vanilla essence
- 2 cups of oatmeal (or any kind of flour)
- 1/2 cup of ground walnut (or any kind of nuts)
- 1 teaspoon of baking soda
- 1/3 teaspoon of salt
Instructions:
First step:
Melt a half butter (approximately 100g), add 3 spoon of ginger honey (or other kind of honey, if not, you can use peanut butter instead) and mix until homogenised on very low heat. At the end, add the 1 teaspoon of vanilla essence.
Next step:
Put the 3 eggs in a blender (or in a bowl if you want to use a mixer) and mix them until they are a bit foamy, then add the melted butter with the sweet flavours and also the 3 bananas (chopped/mashed). Blend/Mix them together until a creamy texture is obtained.
Third step:
In a bigger bowl mix 2 cup of oatmeal (you can use any kind of flour instead, like coconut, almond, all purpose flour etc.) with 1/2 cup of ground walnut (or any kind of nuts you cherish), 1 teaspoon of baking soda and 1/3 teaspoon of salt. Gradually add the creamy texture obtained from step two and mix thoroughly.
Last step:
Choose a non-stick baking tray (minimum 15×6 inch / 38x16cm), I used two smaller silicone baking tray (9×3 inch / 22x8cm) in which you pour the banana bread’s dough. Put it into a preheated oven and let it bake at 175 degrees for 50-60 minutes.
Test the Banana Bread with a toothpick or a needle before taking it out of the oven, to see if the core is also fully cooked.
