  • 2 tablespoons of sunflower oil
  • 1 leek
  • 1 red onion
  • 1 fennel
  • 4 scallions
  • 1 red bell pepper (California Wonder)

  • 1 carrot
  • 1 parsley root
  • 4 cloves of garlic (optional, based on your main dish choosing)
  • 1 dl of water (tomato, lemon or mandarin juice, depends on what the main dish is)
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of pepper
  • 1 bunch of dill or parsley leaves

Grease the frying pan with 2 tablespoons of sunflower oil then add the chopped fennel, sliced carrot, and parsley. Sauté until they begin to soften slightly, about 5 minutes.

Add the chopped leek, onion, and scallions, continuing to stir & brown until translucent, up to 5 minutes. Finally, add the diced bell peppers and crushed garlic, stirring until they soften, approximately 5 minutes.

Reduce the heat, then add the 1/2 teaspoon of salt and 1/2 teaspoon of pepper. Pour in 1 dl of hot water (mandarin juice or tomato juice, whatever you prefer). Sauté for 5 more minutes, then stop the heat.

Serve this simple side dish alongside any main dish, especially steaks, garnish with sauces, chopped dill or parsley leaves, based on your preferences. It is best paired with lamb and roasted meat recipes.
