Delight your senses with the enticing flavors of this stew recipe. In just 30 minutes cook time, tender boneless chicken cubes mingle with a medley of fresh vegetables. Enhanced with a blend of spices, mustard, and pesto, this stew is a symphony of goodness. Serve over couscous and garnish with parsley leaves. Enjoy the feast!
Ingredients:
- 1 kg of boneless chicken leg
- 1 small fennel
- 1/2 leek
- 3 scallions
- 1 red bell pepper
- 5 cloves of garlic
- 3 tablespoons of sunflower oil
- 2 tablespoons of home-preserved vegetables
- 1 tablespoon of mustard
- 1 tablespoon of pesto
- 1 teaspoon of turmeric
- 1 teaspoon of Breckland thyme
- 1/2 teaspoon of sumac
- 1/2 teaspoon of black cumin
- 1/2 teaspoon of black pepper
- 1 dl of water
- 150 ml of tomato juice
- 2 tablespoons of soya sauce
- parsley leaves (optional)
Instructions:
Clean all the vegetables. Cut the half leek in thin pieces. Then chop the fennel, the scallions, the red bell pepper and the garlic into small pieces (do not use the stalk).
Clean and cut the chicken meat (boneless legs) in cubes. Grease the frying pan with 3 tablespoon of sunflower oil then stir and fry the meat cubes on medium-high heat until they get a golden color (up to 10 minutes).
When your meat cubes are glowing in golden, lower the heat to medium, add the leek and the fennel. Stir & brown until they glassy (up to 5 minutes).
Then add the red bell pepper and let it brown & stir until it softens (up to 3 minutes).
Lower your het, then add 2 tablespoons of home-preserved vegetables, 1 tablespoon of mustard, 1 tablespoon of pesto, also add all the spices (1 teaspoon of turmeric, 1 teaspoon of Breckland thyme, 1/2 teaspoon of sumac, 1/2 teaspoon of black cumin, 1/2 teaspoon of black pepper).
Place the garlic on top, stir & brown another minute or two.
Pour on top of it the 150 ml of home-preserved tomato juice, 1 dl of water and add 2 tablespoons of soya sauce.
Place a lid on your pan (nut a must, only in case you do not wish to stir all the time) and cook the stew for 10 minutes.
