Ingredients:

  • 500g Oyster mushrooms (pleurotus)
  • 100g Shiitake mushroom (optional)
  • 2 parsley roots
  • 2 carrots
  • 1 celery
  • 1 onion
  • 1 red bell pepper
  • 6 cloves of garlic
  • 1 1/2 litre of water
  • 75g butter
  • 2 tablespoons of olive oil
  • 1/2 teaspoon of pepper
  • 1 teaspoon of red pepper powder (paprika)
  • 1/2 teaspoon of salt (as less as possible)
  • 1/2 jalapeño or chili powder
  • 1 dl of cooking cream
  • 2 tablespoon of apple vinegar (or 1 lemon’s juice)
  • parsley leaves

Instructions:

First steps: Preparing the ingredients for Pleurotus Soup
Chop the onion, garlic, parsley leaves, jalapeño/chili, and red bell pepper. Clean and cut the carrots, parsley roots, and celery into small pieces. Then, cut the cleaned mushrooms into larger pieces.

Next steps:
Grease a frying pan with 2 tablespoons of olive oil for browning the chopped vegetables and mushrooms:

  • Firstly, stir and brown the onions until translucent.
  • Then, add the chopped carrots, parsley roots, and celery. Stir and brown for 5 minutes.
  • Add the red bell pepper, chopped garlic, and jalapeño. Stir and brown for a few more minutes.
  • Add the mushrooms and butter on top. Stir carefully and cook on high heat for approximately 7 minutes, until softened.

Lower the heat, add all the remaining spices from the list, and stir quickly for a few more seconds.

Last steps:
Afterward, add water and boil the Pleurotus Soup for 15 minutes. At the end, add the cooking cream and 2 tablespoons of apple vinegar or lemon juice. Stir and boil for an additional 2 minutes.

Remove the soup from the stove and serve your soup with parsley leaves.
