Springtime Wild Garlic Cream Stew

Ingredients:
- 2 tablespoons of olive oil
- 1 leek
- 3 scallions
- 1 orange California Pepper
- 2 bunch of wild garlic
- 1 sweet potato
- 1 dl of water
- 1 dl of white wine
- 1 dl of sour cream
- 25 g butter
- seasoning with salt and pepper
Instructions:
1. Preparing the ingredients for Springtime Wild Garlic Cream Stew:
Begin by peeling, cleaning, and slicing the sweet potato. Next, clean and chop the leek, scallions, and California Pepper (preferably orange), and cut the wild garlic into smaller pieces.
2. Cooking the Springtime Wild Garlic Cream Stew:
Steam the sweet potato slices for 15 minutes or boil them in water until tender.
In a frying pan, heat 2 tablespoons of olive oil and add the chopped leek. Sauté approximately 3 minutes. Then, add the chopped scallions and diced orange pepper, cooking until they begin to soften, about 5 minutes.

Season with salt and pepper, and simmer for an additional 2 minutes, stirring occasionally.
