Easter Extravaganza: Luxurious Marinated Lamb Delight

Ingredients:

  • Lamb meat (1 leg of lamb or racks)
  • 1 dl of sweet white wine
  • 1 dl of tomato juice
  • 3 tablespoon of olive oil
  • 2 tablespoons of mustard
  • 1 teaspoon of salt
  • 1 teaspoon of pepper
  • 1 teaspoon of paprika
  • 1 teaspoon of fennel seeds
  • 1 teaspoon of dried thyme
  • 1 teaspoon of fenugreek
  • 1 teaspoon of juniper
  • 4 springs of thyme
  • 2 springs of rosemary
  • a bunch of wild garlic
  • 4 bay leaves

Instructions:

1. Marinating the meat:
Begin by thoroughly washing the lamb meat, ensuring to remove any excess fat or membrane, then pat it dry. Rub the meat generously with salt and paprika.

In a deep pot or bowl, place the meat, add olive oil, mustard, sweet wine, tomato juice, and all grounded, dried spices. Massage the meat thoroughly, cover, and refrigerate for at least 8 hours.

2. Roasting the Luxurious Marinated Lamb Delight:
Preheat the oven to 180°C. Transfer the marinated lamb and its contents to a deep cooking tray with a lid. Add juniper, sprigs of rosemary, thyme, and bay leaves.

Cover it with a lid and slowly roast the lamb meat for approximately 1.5 hours, until tender.
Then remove it from the oven, flip the lamb meat, cover it with wild garlic, and replace the lid. Place it back in the oven and let it simmer for 15 minutes.

When done, remove the lid, arrange the wild garlic leaves to be covered by the sauce, or remove all herbs and sprigs completely to prevent them from getting too caramelized.

Place the tray back into the oven and let the meat brown slightly, approximately 15 minutes.

3. Serving the Luxurious Marinated Lamb Delight:
