Garlic Herb Fried Brains with Tender Boiled Okra

5 minutes preparation time, 12 minutes frying time

Ingredients:

  • 500 g of pork brain
  • 400g green okra
  • 2 spoons of sunflower oil
  • 2 baby garlics
  • 2 spring onions
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1 squeezed lemon juice
  • fresh basil leaves (optional)

Instructions:

1. Preparing:
Clean the pork brains and chop the herbs.

2. Browning Garlic Herb Fried Brains :
Heat 2 tablespoons of sunflower oil in a frying pan over medium heat, then add the brains and fry, stirring occasionally, until the water released starts evaporating, about 5 minutes.

Add the chopped baby garlic and onions. Stir and steam until their volume is reduced by half, then add the salt and pepper.

3. Cooking Garlic Herb Fried Brains :
Continue stirring until the ingredients soften and brown, about 5 minutes. Meanwhile, bring a pot of water to a boil and add the green okra for cooking (about 10 minutes).

The onions and garlic should appear translucent in the pan by now. Pour in 1 squeezed lemon juice, add the chopped basil leaves, stir and let it simmer for 2 more minutes, so the brains could absorb its flavour. Then remove the pan from the stove.

5. Serving Garlic Herb Fried Brains with Tender Boiled Okra:
Drain the boiled okra from the water. Then serve it with the fried garlic herb brain and other horderves of your preference. Garnish it with basil leaves and lemon slices. Serve it with toast bread.
