Banana Breeze Coconut Ginger Oat Cookies, a Fiber Rich Meal

10 minutes preparation time, 20 minutes bake time

Ingredients (1 kg of cookies, 4 trays, 20 min. bake each):

  • 2 eggs
  • 200 g melted butter
  • 4 spoon of ginger flavoured honey
  • 2 teaspoon of vanilla essence
  • 2 bananas
  • 100 g of coconut flakes
  • 250 g of fine oat flakes (oatmeal)
  • 175 g of oat flour (or coconut flour)
  • 3 dl of coconut milk (cream)
  • 2 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 100 g of raisins
  • 2 teaspoon of cinnamon
  • 1 teaspoon of cloves
  • 1 teaspoon of ginger
  • 1 lemon’s zest

Instructions:

1. Preparing Banana Breeze Coconut Ginger Oat Cookies, a Fiber Rich Meal:
Melt 200g of butter over very low heat, then remove it from the stove and mix in 3-4 tablespoons of ginger honey until homogenised. Add 2 teaspoons of vanilla essence.

Beat 2 eggs until slightly foamy, then add the melted butter mixture, grated lemon zest and 2 mashed bananas. Mix until creamy.

In a larger bowl, combine the coconut flakes, fine oat flakes, and flour (preferably coconut or oat flour) with the baking soda, cinnamon, cloves, ginger, and salt.

Gradually add the creamy banana mixture and mix thoroughly. Stir in the raisins, mixing well. Allow it to cool for 5 minutes, until the flakes absorb the liquid and expand.

Gradually add 3 dl (more or less) of coconut cream/milk until the batter reaches a creamy and formable texture.

2. Piping Banana Breeze Coconut Ginger Oat Cookies:
Next, transfer a portion of the prepared dough into a piping bag, then cut a corner of the bag to allow for forming small shapes. Or, use two teaspoons instead.

Pipe small shapes onto a tray lined with baking paper, leaving approximately 4 cm of space between each.

3. Baking Banana Breeze Coconut Ginger Oat Cookies:
Place the tray with the shapes in a preheated oven (175°C) and bake the cookies for 20 minutes.

Allow them to cool for a few minutes, then transfer them to a box to keep them soft.

4. Serving Banana Breeze Coconut Ginger Oat Cookies, a Fiber Rich Meal:
Serve them with coffee, tea, fruits, or jams for a delicious breakfast treat.
