Ingredients for mushroomix stew:
- 200g Oyster mushrooms (pleurotus)
- 100g Shiitake mushroom
- 100g Shimeji mushroom
- 100g Champignon mushroom
- 1 small carrot
- 1/2 leek
- 2 scallions
- 6 garlic scapes or 1 green garlic (if season, if not, use 3 cloves of garlic)
- 50g butter
- 2 tablespoons of olive oil
- 1/2 teaspoon of ginger powder
- 1/4 teaspoon of pepper
- 1/4 teaspoon of nutmeg (optional)
- add a bit of salt (i do not used any)
- 1 dl of water (if needed)
- parsley leaves
Instructions:
First steps:
Clean and chop the carrots, leek, scallions, and garlic into small pieces, followed by the mushrooms (for which i use the word mushroomix) and parsley leaves.
Next, grease a frying pan with 2 tablespoons of olive oil to brown the chopped vegetables and mushroomix.

First, stir and brown the carrots, leek, and scallions for 5 minutes. Then, add the garlic and mushrooms, and continue stirring and browning over high heat for another 5 minutes. Next, add the butter and all of the spices, stirring carefully. Reduce the heat, cover the frying pot with a lid, and let it steam for 7 minutes, until the mushrooms soften. If necessary, add a bit of water.
Using butter while cooking mushrooms adds a rich and savory flavor to the dish, enhancing its overall taste and texture.
